A lighter version of a classic, this tasty dish is a favorite when we're looking for something satisfying -- and utterly comforting!
Mac & Cheese with Dandelion and Feta by The Food Gays
200g macaroni noodles 4 litres water 1 teaspoon salt 1 tablespoon neutral cooking oil 1/4 cup red onion, finely diced |
2 garlic cloves, minced 1 bunch dandelion, stems removed 1/2 cup feta cheese, crumbled black pepper, to taste |
Method
Bring a large pot of salted water to a boil. Cook macaroni noodles according to package directions.
In a frying pan on medium heat, add oil. Once warm, add onion, and sweat for 3-4 minutes until they become slightly soft. Add garlic, and cook for another 2 minutes. Drain pasta and set aside 1/4 cup of the cooking water.
Add dandelion to the pan, and lime juice. Cook for a minute or two before adding the pasta. Add feta cheese and black pepper. Combine well and serve.
